Usually it's a Food Friday, but with as infrequently as I've been posting around here, you'll have to take what you can get! As readers may or may not have gleaned, my basic dietary plan is to eat a healthy diet 6 days of the week and try to eat my way to diabetes on the 7th day. In anticipation of Sunday (or Sundae), as I was in bed Saturday night, I conceived the basic idea for the dessert I was going to make Sunday evening: Apple Crips plus cream cheese filling. Here's the first iteration of this dessert, which Lauren and I agreed turned out quite well. At least, judging by how the two of us polished it off, it must have been pretty good!
4 c. pared and sliced apples (I like to slice them pretty small)
1/2 c. sugar
1 T. lemon juice (optional--omit if using tart apples)
1 8-oz pkg cream cheese
1/3 c. maple syrup
1 egg
1 T. vanilla
1/3 c. flour
1 c. rolled oats
1/2 c. brown sugar
1/2 tsp salt
1-2 tsp cinnamon
1/3 c. butter, melted
Preheat oven to 350. Mix apples, sugar, and lemon juice in a 8-in or 9-in square pan. Mix cream cheese, maple syrup, egg, and vanilla with electric mixer until very well mixed. Pour over apples. Combine remaining ingredients and layer it on top. Bake for 40 minutes (give or take).
